Foodie Friday


Hummus

One of my 'bff's' is a lovely Lebanese gal who is ONE fantastic cook. I asked her recently for her hummus recipe and like many good cooks she had no measurements, just estimates, but graciously gave it to me. Hers is like none you have ever tasted before and honestly mine is just O.K.
Start with dried garbanzo beans and follow directions for soaking and cooking on the package. 

 Did you know these beans are one of the most healthy? They are full of fiber and anti-oxidants and are proven to decrease cardio-vascular risks, regulate blood-sugar, and many other things. Go here for a great article.

The ingredient list for Najwa's hummus is simple; 
beans, tahini and lemon juice and salt.  

10 health benefits of tahini:

  1. It’s rich in minerals such as phosphorus, lecithin, magnesium, potassium and iron. 
  2. It's a good source of Methionine, which aids in liver detoxification
  3. It’s one of the best sources of calcium out there. 
  4. It’s high in vitamin E and vitamins B1, B2, B3, B5 and B15. 
  5. Helps to promote healthy cell growth. 
  6. Prevent anemia. 
  7. Helps to maintain healthy skin and muscle tone. 
  8. It has 20% complete protein, making it a higher protein source than most nuts. 
  9. It's easy for your body to digest because of its high alkaline mineral content, which is great for assisting in weight loss. 
  10. It is high in unsaturated fat (good fat!)

Purée beans in food processor and add about 1/4 cup each of lemon juice and tahini to start. I keep tasting and adding bits more of each one until it tastes like what I remember. I also add a few dashes of cayenne for a little zing and salt to taste.
My favorite way to serve it with baby bells, you might enjoy it with your favorite cracker and it's delicious over meat. Najwa serves hers with fresh pita with a drizzle of olive oil.

Meet Renee Finberg!



She (here she is with designer Miles Redd) is one of my very first bloggy friends and a very talented designer that grew up around the design industry. She walks her talk.
We have much in common, shared many a telephone conversation and I can truly call her "friend." I am amazed at all we have in common and know if we lived closer (she's in Boca Raton, FL and I'm in Atlanta, GA) we would sure get into some trouble. I posted a few things once before here so I had to reach deep to find a few more tidbits, so here goes...


1. The first thing I do when I get up is head straight for the coffee pot and sit with a hot cup and read from My Utmost for His Highest by Oswald Chambers and the Bible.



2. I workout every day except weekends.



3. Punctuality is the utmost of importance....I am always early.



4. Good manners are a must.



5. A treat for myself is a '1-pump mocha with skim milk and whip cream!' :>)




6. I am fiercely loyal. Friends are so very important to me and I will travel far and wide to spend time with them!



7. I spend quite a bit of time alone due to DH travels and being new in a community. It usually takes 2+ years for me to find my niche in a new place, mid-year this year will be 2 years.

What I do on Wednesdays

Every Wednesday afternoon I go to a Senior Living Community near my house and do crafts with some very special ladies. I enjoy spending time with them and they wonder why. Most are quite spunky and are not afraid to say what is on their minds.

There are artists of different mediums and one has shown her work all over the eastern United States. Another couple were secretaries - they reminded me today that in this day they would be called "Executive Assistants". I helped one of the ladies earlier this week on a sewing project she did with such ease still at 85. She gave me some good pointers too!


These gals are go getters and bounce from one activity to another in the complex. One of the projects we do frequently is make cards and a couple of them make sure that everyone gets a birthday card or whatever the need might be.


I see many of the 'fellers' hanging out in the library telling all kinds of tales, they are so cute.
One of the gals today told me her husband loves to fish but doesn't have anyone to go with, so DH is going to give him a ring.


Today some of the ladies were doing a beading project for Christmas and the others were painting and decoupaging leaves for fall.
